Welcome to Pasta Grannies! I find and film real Italian grannies - nonne - making delicious, traditional, handmade pasta. And sometimes soups, breads, dolci, rice dishes, that kind of thing, because that is what the Grannies wanted to cook for me.
I'm saving skills and sharing traditions one recipe and Granny at a time!

Easy Ricotta ravioli with tomato sauce! | Pasta Grannies
87-year-old Fiorina (with a little help from son Angelo) makes ravioli with ricotta cheese served with a tomato sauce called "pummarola". She lives in Laurino, in the Cilento area of Campania. Here's the recipe:
For the sugo:
1 large garlic clove, extra virgin olive oil, 1kg pork ribs , 400ml passata, 400ml pummarola tomato sauce (which has been bottled with garlic and herbs), salt, 2 small celery sticks with leaves
parsley stalks (kept from chopping the leaves see below)
The sugo needs to simmer for an hour.
For the ravioli filling:: 3 eggs, 1 tablespoon chopped parsley leaves 400g drained cows milk ricotta, 30g grated pecorino cheese
For the dough: 500g of soft wheat flour, 4 eggs, water if necessary (it will depend on the size of your eggs)

Please, what types of liver does she use? Chicken? Beef? Pork? All three? This looks so good.

I have some experience with low blood pressure moments and I don't want Fiorina to have a fall - I wonder if knee high compression socks or tights would also be helpful to her!

@@pastagrannies Ah I was hesitant to comment, strangers offering medical advice is rarely helpful. I'm just a bit afraid of falls for myself so I thought I'd toss the idea out, but should have kept my comments on the fabulous looking ravioli!!

That was so much fun to watch. That garden is amazing. I'd love to see more of their gardens and the process of making passata and so on. It's also a very important part that unfortunately gets lost.

Pancetta comes from the belly, it is similar to bacon but not as heavy

"Tielles" are a utmost popular dish in Sète, south of France, where I live ! They are little octopus pies with a saffron and tomato pizza crust, designed by various immigrants : the ragu typically has harrissa in ! It's incredible. I'd invite the Pasta Grannies team on a tour any day. A lot of italian-descended families now own the most successful "tielleries", perpetuating the craft ♡
“When they bought this board.” It is almost unimaginable how many meals were prepared on that board and they even had to obtain water from the fountain. These tough ladies raised families, worked and have lived the equivalent of so many lives. Thanks for chronicling this lovely woman and her family. Back to the dish: fresh ingredients plus love fill each ravioli. Bravo, again, for another joyous episode!
